Unter den ältesten Weingärten im Salento haben wir lange nach geeigneten Trauben gesucht, die die Seele dieser edlen Rebsorte am besten zum Ausdruck bringen. Drei Weingärten haben wir ausgewählt und sie mit dem Buchstaben F gekennzeichnet. F steht für die Feudi, zu Deutsch Lehnsgüter, von San Marzano. Als Teil unserer Geschichte ist dieser Buchstabe zu einem Gütezeichen für den Negramaro geworden, ein Symbol unserer Leidenschaft für diese antike und komplizierte Traube.

Cantine San Marzano Jahrgangsauszeichnungen
Rebsorte: Negroamaro.
Anbaugebiet: Contrada di Monte La Conca, zwischen San Marzano (TA) und Francavilla Fontana (BR).
Boden: Terra Rossa von feinem Gefüge mit Kalksubstrat, spärliche Felserhebungen und ein intensives Vorkommen von Eisenoxid.
Reberziehung: Baumerziehung (4.500 Weinreben pro Hektar).
Lese: letzte Septemberwoche.
Weinbereitung: Die Trauben werden von Hand gelesen und in kleine Körbe gelegt; Mazeration: 18 Tage auf 80 % der Masse, 25 Tage auf 20 %, Gärung bei kontrollierter Temperatur von 24–26 °C.
Ausbau: 12 Monate in Barriques aus französischer und kaukasischer Eiche.
Organoleptische Eigenschaften: Farbe: starkes, intensives Purpurrot. Duft: reich und komplex, mit Noten von Gewürzen, Waldbeeren und Kirschkonfitüre. Wein mit vollem Körper, weich und harmonisch, reich an edlen Tanninen, mit angenehm lang anhaltendem Abgang.
Gastronomische Empfehlungen: zu kräftigen Pastagerichten, rotem Fleisch, Wild und reifem Käse. Ein Meditationswein.
Serviertemperatur: 18 °C.
